If you’re new here, you may want to get caught up on how I do meal planning.  If you are a die-hard reader bordering on stalker, then let’s just get right to it!
 
Summer’s here! So you’ll see lighter dishes, with a little less meat & grains in them for us. 
 
I love eating leftovers the next day because I save myself time by turning dinner cleanup into packing the next day’s lunches in our awesome lunchboxes and let’s face it, life is just plain easier when you only have to worry about providing a healthy breakfast & dinner! Real food can be easy! Let’s begin, shall we?
 
Sunday
Whole-wheat pancakes I will make these with my sprouted flour.

Leftovers from Kevin’s birthday week/clean out the fridge
Grilled steak & balsamic green beans

Monday

Stuffed Peaches with goat cheese
LEFTOVERS from Sunday dinner – probably will turn it into a steak salad.
Caprese salad & Honey Balsamic Carrots
Tuesday
Eggs n’ toast, fruit
LEFTOVERS from Monday dinner.
Broccoli Casserole
 
Wednesday
Yogurt PB&J Smoothies
LEFTOVERS from Monday dinner
Nachos with grass-fed cheese (I got it on sale at Sprouts for $3.50), green onions, olives & homemade salsa on organic corn chips.
 
Thursday – Sunday
4th of July BBQs/adventures/camping/etc.
p.s. I’m still making my pumpkin pie for the 4th.
 
Snack choices this week:  Homemade Gatorade, it’s too hot here ya’ll!
Desserts this week: Lemon Coconut Delights, Almond Coconut Bars
