Spelt & Carob Cookies

Spelt & Carob Cookies
If you’re like me and you don’t wanna eat that hybrid wheat and you’re like me and don’t wanna each chocolate, well then have I got a recipe for you!  Delicious and chewy especially with a tall glass of goat’s milk.  Have I grossed you out yet??  Haha, but seriously, these are dang good.  I normally do eat chocolate, but apparently people with adrenal fatigue (aka low blood pressure) should eat less of it.  So here goes…
1 1/2 C. organic butter 
1 C. honey
2 eggs
2 tsp. vanilla
3 1/2 c. sprouted spelt or wheat
3/4 tsp. baking soda
3/4 tsp. salt
2 c. carob chips
Cream butter and honey.  Add eggs & vanilla.  In separate bowl combine spelt, baking soda & salt.  Slowly add dry mixture to wet.  Add carob chips.  Drop teaspoonfuls onto a greased cookie sheet.  Bake at 350 degrees for 8-10 min.  Enjoy!
