Since we are already melting our faces off here in Arizona, I am breaking out the 10 ultimate popsicle recipes today. Holla to other folks tryin’ to survive the heat!

As I sat and twiddled my thumbs, trying to use my brain to figure out the best popsicle recipes to share with ya’ll, I decided I’d better go big or go home. Do it old school, and bust out all the delicious popsicle recipes I knew.

Key Lime Pie Popsicles

Ingredients
  1. 2 cans organic coconut milk or whole milk -- Here's where I buy organic coconut milk
  2. Juice & zest of 1 lime
  3. 3 TBS. honey -- Here's where I buy it
  4. pinch of salt
  5. 1 c. chopped macadamia nuts -- Here's where I buy it
Instructions
  1. Mix coconut milk, lime juice & zest & honey in a blender/food processor.
  2. Pour into popsicle molds or cups and freeze for 6+ hours.
  3. Before eating remove from mold & roll in chopped nuts.

  1. 10 peaches
  2. 2 TBS. honey (more if your peaches aren't that sweet) -- Here's where I buy it
  3. 4 sprigs of fresh lavender or 2 drops Lavender essential oil (click here to buy)
Instructions
  1. Mix peaches and honey in a blender/food processor.
  2. Add the leaves from the sprigs of lavender & stir with a spoon.
  3. Pour into popsicle molds or cups and freeze for 6+ hours.

Ingredients
  1. 4-5 bananas
  2. 2 cans of organic coconut milk -- Here's where I buy it
  3. 1/2 tsp. pure vanilla extract -- Here's where I buy it
  4. 1/2 tsp. salt
  5. 1 c. chocolate chips -- click here to buy my favorite healthy chocolate chips in bulk
  6. 1/2 c. coconut flakes
Instructions
  1. Mix bananas, coconut milk, vanilla, & salt in a blender/food processor.
  2. Blend till mixed.
  3. Toast coconut flakes in a pan over medium heat for about 5 min.
  4. Pour liquid mixture into popsicle molds, top with toasted coconut, and freeze for 6+ hours.
  5. Before eating, slowly melt chocolate chips in a glass bowl over a saucepan of boiling water, then dip into chocolate and freeze for 5 minutes.

  1. 6 cups fresh or frozen strawberries
  2. 3 cups organic vanilla full-fat yogurt (or buy plain and add some honey & vanilla)
  3. 1 cup macadamia nuts, chopped -- Here's where I buy it
Instructions
  1. Mix strawberries in a blender/food processor.
  2. Layer yogurt and pureed strawberries in popsicle molds and freeze for 6+ hours.
  3. Remove from molds and roll in macadamia nuts.

Cucumber Mint Popsicles

  1. 4 cucumbers
  2. 2 sprigs of fresh mint or 2 drops of peppermint oil -- Click here to buy
  3. 1 squeeze of fresh lime juice
  4. 3 TBS. honey -- Here's where I buy it
Instructions
  1. Mix cucumbers in a blender/food processor.
  2. Strain pureed cucumbers through a strainer.
  3. Mince 6-8 mint leaves and blend with strained cucumber "juice".
  4. Add squeeze of lime juice & honey.
  5. Place a mint leaf in each popsicle if desired.
  6. Pour in popsicle molds and freeze for 6+ hours.

  1. 6 eggs
  2. 1 c. organic cane sugar or coconut sugar -- Here's where I buy it
  3. 2/3 cup fresh lemon juice
  4. 1 TBS. lemon zest
  5. 8 TBS. butter -- Here's where I buy it
  6. 1/2 cup cream
  7. 1/4 cup organic cane sugar or coconut sugarHere's where I buy it
Instructions
  1. In a glass bowl over a saucepan of boiling water, whisk eggs, 1 c. sugar & lemon juice.
  2. Stir constantly until temperature reaches 160 degrees.
  3. It should be nice and thick by now.
  4. Remove from heat and mix in lemon zest & butter.
  5. With a mixer, mix on high cream & sugar until whipping cream forms.
  6. Layer the lemon curd & whipping cream, then pour in popsicle molds and freeze for 6+ hours.

  1. 2 cups (16 oz.) cream cheese
  2. 4 TBS. whole milk
  3. 6 TBS. maple syrup -- Here's where I buy it
  4. 5 cup. of any mixed berries
Instructions
  1. Puree mixed berries in blender. Pour in a bowl and set aside. Blend cream cheese, milk & maple syrup. Fold the berry mixture into your cream cheese mixture and pour in popsicle molds and freeze for 6+ hours.

  1. 4-5 natural cane sugar root beer soda -- Here's where I buy
  2. 1/2 c. cream
  3. 2-4 TBS. organic sugar or coconut sugar -- Here's where I buy coconut sugar
Instructions
  1. In a mixer, blend whipping cream while adding sugar until whipped cream forms.
  2. Drop spoonfuls of whipping cream in popsicle mold & pour rootbeer soda on top. Freeze for 6+ hours.
