Copycat PF Changs Asian Lettuce Wraps

These Asian Lettuce Wraps are a knock-off version of the famous PF Changs lettuce wraps.  A great, light but filling meal, these also have the option to go vegetarian.

Mince your garlic & ginger, then chop up your cashews, water chestnuts & onion.

If you want meat in it, your gonna have to either get your hands on some ground chicken, or do it yourself with your new awesome Blendtec.  (Except mine just broke and now I have return it for a new one–Yay for getting a brand new one, Boo for it breaking after only 6 months.)

Pulse that chicken till it’s nice and ground.  Then clean it real good because your grossed out that tomorrow you’ll make a smoothie in the place raw chicken used to be.

Now, here’s you line up for the sauce.  PB, vinegar, sesame seed oil, chili powder, honey, Bragg’s Amino’s (which is basically soy sauce)

Saute them onions real good.

Add your shicken. Or chicken, whichever way you wanna call it.

Once the shicken’s cooked, add your garlic & ginger.

Now, I didn’t really take a picture of me making the sauce because basically you just mix it all together and heat it up until it’s blended and then pour it on the shicken mixture.  You get it.

Let the spices & sauce just simmer a bit till the sauce thickens.

Now just plop that pan on your counter, grab a head of lettuce, and ring that dinner bell ’cause
dinner.  is.  done.

Asian Lettuce Wraps  Serves 8

2 lb. ground chicken (or another cup of cashews, chopped)
1 c. cashews, chopped
2 can water chestnuts, chopped
1/2 medium onion, chopped
1 clove garlic, minced
1 inch knob of fresh ginger, grated

SAUCE:
2 TBS. sesame oil
5 TBS. Bragg’s Aminos (soy sauce)
2 TBS. peanut butter
3 TBS. honey
2 TBS. red wine or rice vinegar
1/2 tsp. chili powder

One head of romaine or iceburg lettuce

Directions:
1. Saute onion in a little oil.  Add chicken, and cook until no longer pink.  Add cashews, water chestnuts, garlic, & ginger.  Reduce heat to simmer.
2. Mix all sauce ingredients in saucepan.  Heat until combined.  Add to chicken mixture and simmer until sauce is thickened.  Serve hot or cold with freshly washed lettuce.

    I made this recipe tonight and It was extremely delicious. I did end up having to use some extra soy sauce, rice wine vinegar, a little sea salt, more red chile powder but thats just my family’s taste. Iam so happy a co-worker of my husband forwarded this recioe to him and he sent it to me and it was a huge hit tonight at dinner! These lettuce wraps are going in the weekly rotation, thanks for the inspiration!

    So I stumbled onto your blog through a blog on someone’s blog on someone’s blog – you know those times? πŸ™‚ Haha. Anyways, I’ve been wanting a PF Chang’s lettuce wrap recipe for a while now, so this post is perfect, thanks.

    And then I got to reading a few of your archives and I have to say – I think we might be long lost twins in a lot of ways! πŸ™‚ We also eat a whole foods, plant based diet. And I read your thoughts about not knowing how to “classify” yourselves (but thinking that vegetarian is about the closest fit) and how it drives you crazy and I wanted to shout “Amen!”. It’s not that it drives me crazy for me, but I wish I had some easier way to communicate it to people. It’s so huge and so important and so life changing. Our changes came about because of my daughter’s cancer and my other daughter’s health problems. Through a series of events I discovered the benefits of a whole foods, plant based diet. I, too, really strongly believe that food plays a huge role in our health, healing, and disease prevention! I could go on and on, but I won’t. πŸ™‚ It’s a message I wish I could shout from the rooftops to the rest of the world. Anyways, a HUGE guide/gorgeous epiphany/gigantic YES! for me has been Michael Pollan’s books – “In Defense of Food”, “The Omnivore’s Dilemma”, etc. Have you heard them? Read them? If not, I think they’d be ones you’d really like and identify with.

    Also, I just recently made the decision not to homeschool, but to find some other alternative to public school. Still trying to cope with it – it breaks my heart a little. I really identified with what you wrote – about knowing what an incredible experience it would be and still believing in the reasons behind homeschooling. Anyways… I’m busy trying to figure out what the school option will be. And I appreciated your review of Kimber Academy. I’d be interested to hear more of your thoughts from your experiences there. We just moved to AZ a few months ago and live in the Phoenix area, so it’s definitely something I’ll be looking into. So, thanks!

      Yay! I love to connect with people like me! That’s awesome that you changed your diet, although it does stink that it had to be because of health problems πŸ™ I do love those books, but I haven’t read them in a while and I need to read them again!
