Ingredients

Jicama Slaw

  • 1 large bulb of jicama , shredded
  • 4 large carrots , shredded
  • 1 golden beet , shredded
  • 1 bunch diced green onions
  • 1/2 c minced cilantro

Dressing

  • 1/2 c mayo (try my homemade version)
  • 1/4 c yogurt (try my homemade version)
  • 2 TBS vinegar
  • 2 TBS honey
  • salt n' pepper to taste

Instructions

  1. Combine shredded veggies & cilantro in a bowl.
  2. Mix dressing ingredients in blender and pour over slaw.
