Mexican-inspired Rice in the Rice Cooker

Living in Arizona has its benefits.

We arguably have the most authentic Mexican cuisine this side of the border.

Here in Arizona you’re not gonna find “Tex-Mex wanna-be” recipes.

Nope, here you’ll find amazing flavor that is as authentic as they come. Well, as authentic as us Americans can make it 😉

One of the best adaptations I’ve discovered is how to make Spanish rice in a rice cooker. Rice cookers are one of the best contraptions because all you have to do is add the exact amount of water and then walk away. It will automatically turn off when it’s reached the perfect texture, and you’re pretty much guaranteed to have perfect rice, every time. 

How to make Spanish rice in a rice cooker

The only thing that’s different about making Spanish rice in a rice cooker is that you’ll need to toast the rice beforehand. I usually sauté onion & garlic first, then I’ll add the uncooked rice and let it toast a good 5-8 minutes before adding it to the rice cooker along with some tomato paste, green chilies, and spices. 

The end result is a rustic, flavorful dish that is sure to please.

Cook Time: 20 minutes
Total Time: 35 minutes

A quicker version of cooking rice!

Ingredients

  • 3 cups uncooked white rice
  • 1 bulb onion diced
  • 4 cloves garlic minced
  • 2 Tbsp avocado oil (or similar oil)
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 tsp cumin
  • 1 can green chilies
  • 1 7 oz. jar tomato paste
  • 1 Tbsp honey
  • 4 cups chicken, beef, or vegetable broth
  • 1/2 cup water

Instructions

  1. In a cast iron pan over medium-high heat, saute onion & garlic in avocado oil until fragrant.
Add 3 c. uncooked white rice and cook while stirring until it's lightly browned. (about 5-8 min.)
Pour toasted rice/onion/garlic mixture into rice cooker.
Add water, broth, honey, tomato paste, green chilies, cumin, salt, & pepper.
Start rice maker and fluff when done. Serve warm.
