Lemon Meringue Popsicles

Ingredients

organic cane sugar or coconut sugar
2/3
cup
fresh lemon juice

lemon zest or 20 drops lemon essential oil

butter
1/2
cup
cream
1/4
cup
organic cane sugar or coconut sugar
Instructions
In a glass bowl over a saucepan of boiling water, whisk eggs, 1 c. sugar & lemon juice.
Stir constantly until temperature reaches 160 degrees.
It should be nice and thick by now.
Remove from heat and mix in lemon zest & butter.
With a mixer, mix on high cream & sugar until whipping cream forms.
Layer the lemon curd & whipping cream, then pour in popsicle molds and freeze for 6+ hours.
